CSG times

CSG times

hi, I wonder if anyone can assist me. I have a 1.5kg piece of bacon I want to smoke in my Bradley with my CSG smoker does anyone know how long I should leave it for, for a med to strong smoke?

I generally do bacon for a full charge, ie 10 hrs, I have a feeling Phil does a double dose, perhaps he'll comment later.
Curing is not an exact science... So it's not a sin to bin.

I do two runs but the half bellies or loin are closer to 2.5 Kg.
Fashionably late will be stylishly hungry.

I do around 30 hours - but my smoker has a really efficient chimney which I leave with the damper open to give a fast throughput of smoke. I guess that my bacon will have a similar smoke level to Dave's (Saucisson's) 10 hour smoke.

Give that the Bradley is a lot smaller than my chamber, I'd try one full CSG smoke (10 - 14 hours) for a start.

I haven't used the csg, but was wondering how do you all judge the smoke by just using time as the measure when using chambers of different volumes?

eg If you burn for 10 hours in a cardboard box it will be much heavier smoke than it would be in a whole smokehouse,

Just wondering what folks do?

I guess that's why my times are different to Dave's; I doubt that mine's 3 times more smokey.

I think that whilst the size of the chamber obviously has an effect, the speed of throughput of smoke probably affects the outcome more.

I agree: although I smoke in a number of different devices, they all have a similar relatively small volume, with a relatively low flow rate. I think you will most likely need to tune the time to the device you are using.

Ive found 1 run to not be enough for my tastes. I do 2 now. Couldn't tell a big difference from 2 to 3 runs so I have settle on 2.
