Nah, she is fully aware my palate is a goodun, & since having a nosejob, ..(not mere vanity) her sense of smell is extremely limited too, which is a good thing as she can sort out the dogs backyard run, ...my stomach is very "sensitive" to that, so I remain for bleach scrubbing duties only, (my get out of jail "free" card) 3 big boxers.

I promise to try smoking some mexicana as soon as I can once more see the light in the back of the fridge, currently banging out those 500g bries for all & sundry.


Oh, nearly forgot...

Plum chutney cheese smoked ... "non" loses anything it held to the smoke (usual mix)
Wensleydale Apricot & ginger ..."oui"

Wensleydale cranberry & orange "MIA" lost to the fridge, we hope to have a news update later, ..it's carnage in there, a dense jungle of cheese & jolly (gaudy) xmas wrapped cheese.

The Apricot & ginger works well, though the wensleydale has hardened (perhaps our fridge kept at 1C or perhaps as a result of the smoke drying out an already crumbly cheese!? .regardless the smoke & gingerey marmalade overtones are moreish, I have another small round I will put in with less smoke time to see how different it is over time, again these are short rested & not matured for long enough in my opinion, however the plum chutney cheese will be fed to the dogs, though I cannot say the word "treat" will be used with regards to that one.

..hmm marmalade, come out come out wherever you are!
