will it take smoke?

It's been a while (i've been slack).

Am I going to waste some maple syrup by trying to get some smoke in there? obviously it's quite thin sugar water compared to more manufactured items, so i'm hoping a bowl of the stuff will take when put in smoke.

Also going to try some T&L golden syrup at the same time, plus the usual marmite (yes, I absolutely must).

Can you see the maple suffering excessive evaporation which would render it pointless at it's premium pricepoint?

But what if I want unsmoked bacon on my pancakes, yet still yearn for the delicate smokey nature of it's flavoursome tendrils?

yeah, i'm with you on maple bacon (99p for 6 slices this weekend in lidl apparantly) BUT sometimes whilst I like maple, bacon & icecream with my pancakes I need the "run out of pork product option", & to try it with other things, just got a nice oat recipe book via mornflake & 7+kg of jumbo oats to work through, so it's clear it'll be tried & dropped into some batch baking too.

It's viscosity is way different to other syrups, i'd like to try some maple that's only been part processed & not yet filtered to see if it would absorb at any other stage such as when removing excess water / reducing down, rather than simply finished retail product.

Yes a portion of oats will be going through too.

I suppose, if it doesn't take, then "god forbid" introduce some smoked water into the mix & reduce it back possibly, confectionary thermometer might be required.

or has anyone simply splashed some liquid smoke / smoke powder in & done the same thing?
doing quick ribs for the nipper (which she has a rack most weeks) it'd also be nice to add some smoke flavour to bring her on, without having to resort to the bbq.

incidentally Morrisons were / are doing a nice ribs offer at around £3.66 per Kg ...we picked up some good ones, hopefully the offer is still on.

sometimes I think that I think too hard or not at all, such is the keenness to understand to a decent standard.
(I can tie my own laces incidentally but slip on's are easier) :wink:

..oh & I need to fill some of all those brown beer bottles I've been saving with something other than vanilla extract.

16-20hrs csg later

I've now stored my jumbo oats in a parfait jar, had a nibble seem nice, light taste with mellow smokiness, we'll see how it cooks up after it's sat & matured a while, didn't bother with agitating the oats, just left em to it.

The maple sample has really mellowed due to smoke, again will store & see... i'm hoping it hasn't overpowered the maple, time will tell, very nice initial sample though.

Marmite to be flogged with ongoing smoke mercilessly.

I'm sure I remember somewhere about oats having a smoky flavour due to being either dried or cooked over peat, so there's a precedent there.

It'll be interesting to see what they're like when cooked.

Maple syrup update.

(sample straight from the bottle was Aldi Canadian No.1 medium)

Having matured in a glass jar (since late march) it is smokey to the taste, though some of the shallow sample had crystalised, so i'll assume it tastes the same not having messed around with it).

Compared to the original it's stronger but retains smoothness, simply put, like a stronger grade of maple, so quite a stark contrast between the two, but with smoke, not necessarily the sometimes throaty harshness of a stronger maple straight from the bottle, ..subtler than that.

Nice.
I'm going to play with it & see if it'll go either twice as far taste-wise "or what".
