My first, coldsmoked small ham (test) ..meat virgin no more!

About to unwrap & enjoy my 1st small cold smoked ham, hope it is up to scratch, trying to get the look & technique down for presentation & hanging purposes.

If I messed up i'll see you all on the other side. :wink:

a pic of an empty plate to follow... :drool:

(BTW cold smoking was done via my wood gasifier set up & csg).

How did you cure the ham Gus? How long did you smoke it?

I brined my test ham for 8 days smoked for 8 days and cured for 15 days (under instruction)
I used a combination of alder & beech, plus a few herbs when smoking.

I used 2 smoke units my gasifier & the CSG, pending a purchase of some coldstore slab insulation I should be able to show you guys my latest smoker, ..things getting strange right now for which I apologise to all, we are having pups (my boxer bitch got covered by our boxer male ..without our knowledge having been on steroids & showing no interest previously, ...how wrong can you be re nature.

So I am hastily preparing a room, banging some PIR insulation in & out with the silicone gun to provide a leakproof widdle-fest of a birthing pen, ..could be in the next couple of days, ...or not! the bitch is too old, I was expecting the lump to have been a tumour!

smoke dust purchase on hold as I try to stay afloat amidst all this! :cry:

Oops, that's not good. Lets hope mum and kids all come through it OK.

There's no rush with the smoke dust Gus. Hopefully, one or two others will join us to but the fruit woods/hickory at well below retail price.
