I just rang the top one and apparently the butcher in question has become a cafe now and doesn't do it anymore.

Check the yellow pages under "Steel Fabrication" and give them a bell. If you can email them a sketch it's the kind of thing they like to give apprentices to practice welding up, as it only needs to be strong and not particularly precise, and the materials are a set cost. Just a thought.
