Smoking with English Walnut

Hi
I may have a source of English Walnut that I could use to smoke with. Does anybody know what meats are most suitable to smoke with Walnut ? Would it suit my streaky bacon for example.

Walnut on it's own is more suited to darker meats and game.
If your streaky bacon is from a wild boar then you might get away with it.
If not then try blending with some lighter woods and it can add character BR

I would not hesitate to smoke whole joints with walnut- pork loins or ribs, beef brisket, etc. It will be hot enough for diect grilling as well, burgers, steaks, chickens.

One more thing... make sure it is well seasoned wood. One year of drying is good, 2 is better.

Thanks for the info. I would be getting the wood green therefore maybe using it this time next year just in time for Christmas. Some further hunting arount the internet found this site

Hi, Is the wood in shavings or chips? I have several kilos of oak shavings if you fancy a swap...though maybe Bedforshire is a bit of a long way to travel!

It's neither at the moment because it's still attached to next doors tree. We where discussing giving the tree a bit of a trim. Not too sure when this will actually happen. I thought if you can use the walnut to smoke with then give it a try as something different.
