I picked up some oak wood dust from Ashwood Smoking Chips on Friday, certainly took a little finding. I also picked up a leaflet for some of the German sourced smoking chips they stock Raucher Gold which had an interesting comment on the ongoing discussion we've had around the need to get to 15% wieght loss from drying/smoking, this is what the leaflet says:
'An important economical aspect is the weight loss of the goods during the smoking process. This loss is normally approximately 10% in cold smoking goods. Hot smoked goods lose up to 15% of their weight. Through the use of high quality smoking vhips, the weight loss in the goods can be significantly reduced during the smoking process due to a consistent production process and short smoking time.'
I've tried to find the leaflet on the manufacturer's site but to no avail, so you will have to trust me re the reference on this or check with someone else that has been to Ashwood's and presumably will have been given a leaflet.
Clearly nothing conclusive but interesting never the less.
