Cold Smoking Recipes - Win a prize

Ian,

This isn't an entry to your competition but...

To introduce any prospective cold smokers to the Pro cold smoker, why not make it as simple as possible and smoke some lumps of Edam cheese. There's nothing to do other than unwrap, smoke for 10 hours with oak dust, plain and simple. I am still addicted to the stuff as it completely transforms what is basically a not very good piece of 'cheese?'.. Very good for nibbles with a glass or 6 of red wine..

I did some for a friend after he tasted some, but unfortunately he never got it as it kept looking at me every time I opened the refrigerator door :lol:

That would certainly demonstrate the simplicity of it well. I agree with Paul - Edam makes great smoked cheese although admitting it is somewhat embarrassing :oops: :oops:

Hi Mitch, I'm not sure what the unit weighs yet, so don't know if I'll be able to send it out by post to Aus. I will offer people outside of Europe a Cold Smoke Generator instead.

I agree with you Paul! Cheese is a great way to get started... so easy to do, with fantastic results, as you say, it's further enhanced by a bit of red wine.

Funny, the cheese in our fridge can be heard calling, even with the door firmly shut.

A friend of mine sent me this the other day

Hello mate,

Bought 4 fillets of Arctic Char on saturday, bit expensive but had great plans for it.

Brined the fillets in a mixture of runny honey and a very light soy sauce. Then into the cold smoker for a couple of hours and then 4 mins a side on the BBQ.

Tastiest fish me and the family have ever had. Pi***d off I didn't buy more. Even my kids ate it and they will usally venture no further than fish fingers when it comes to eating fish.


That's got me inspired to get up to the lake district and try and catch me a Char in the very near future!!
