Salmon

Just a heads up for the members.

My salmon fillet has gone up £3.90 a Kg from this time last year, and when I commented to my supplier in Scotland, I could buy cheaper fillet in a supermarket, which although not the same quality (somewhere between A / B grade) but very suitable for making pate and sandwichs, he said that most Supermarkets have 1 year contracts with suppliers that keeps the price down. Once these contracts have finished the supermarket price will rise at quite a rate. He said contracts tend to run from year start to year end so come Christmas time salmon will still be cheap but in January prices could rise quite considerably. So buy now!


Evidently our salmon prices have gone skywards because the American market has started to take our fish big time becase of last years poor harvest. But possibly our friends from across the pond could shed more light.

New edicts evidently have just come in that all smoked foods i.e. salmon has to be frozen for a period of 30 days before smoking or taken down to -20. This has real issues for the small suppliers like myself. I need to find out more.
