I looked at this before lunch, now I'll want barbecue all day. Looks really great. What is in the rolled up piece? :D

Its called a fattie and is something like a meat omlett. It consisted of two pounds of breakfast sausage rolled around smoked briskett, mushroom, cheese, scrambled eggs, asparagus, peppers, onion and spices then blanketted with two pounds of bacon. I made this for the pit crew to eat. They are very easy to make and taste fantastic. (I think the addition of the asparagus makes it healthy too) :lol:

That'll be that 2 grams of Asparagus I can see will it? :lol:
Curing is not an exact science... So it's not a sin to bin.

A real nice looking spread Jogeephus. It reminds me that I need to get some fatties on the smoker, it's been way to long.

They worked on it pretty good. What was funny is they also had two sororities there and I could tell many of the girls thought meat came from a package off the grocer's shelf. :lol: It was fun watching them.

Saucisson, good eye. Exactly 2.1 grams. Didn't want to give anyone gout or something. :lol:
