Cold smoker

I have just made a new cold smoker. New Zealand has really good fresh water longfin eels so I initially made it for that purpose but I took my gill net out and cought some parore. Normally a bland tastless fish but with a bit of honey, rosemary and salt I through them in my new smoker and they came out beautiful. Then I bought a new 3 piece rod the next day and on my first cast, I cought a big kahawai. So in the smoker it went. Wow! What a taste sensation. Basically, I dug a fire pit into the bank then ran a piece of iron as a chimbney up to a tin box. Works great. We have one realy good variety of Tea-tree called Manuka thats ideal for smoking fish but I have used it for wild goat, pork, duck, turkey, quail and the odd pheasant when I'm lucky enuf to shoot 1. haha. Most people here use an old fridge and light a fire in the bottom. it works alright but is more of a hot smoker. If anyone would like to know more how it works, just let me know. Sam.

Hi Phil. Sory bowt the late reply. I have been hunting the Mangataniwha Ranges and had limited signal coverage. I have been having trouble getting my photos on the site. Would love to share them so I will keep trying.

Fishing at Taipa beach now

Hi mate. Yes thankyou, the hunting went well. Got a couple of kg of possum fur. About $200 worth. I'm fishing with my new 3 piece surf caster rod at Taipa beach right now. got 1 kahawai fish so far. going to smoke it in my corragated iron smoker, when I get home. Thanx 4 the link. Im still having trouble. The page either comes up in german, or it closes the application due to a memmory error. Don't know why. It has started raining: HANG ON, SUMTHING BIG IS ON MY LINE. so I will put my internet device away 4 now, but will keep trying. GOT ANUTHER MASSIVE KAHAWAI. YEEHAA! cheers, Sam.

Kahawai fish is a new one to me. Do you always have it smoked or is it also good to eat unsmoked?

Yes Kahawai is 1 of my favorite and vesatile fish. it's also good fry'd, baked, raw, hangi. Some people find it too strong but I like it. It is a much underated fish that deserves more attention. The best way I could describe it is like a small Kingfish. I'v got 1 in the smoker right now. Got another 1 ready to go. I put rocksalt, pepper, rosemary, manuka honey and dill on it. Havn't tryd putting dill on it before, but if you don't experiment, you will never know. Got to go check the fish. Wow. looks and smells great. giv it another 10mins with sum green brush to put a little more manuka flavour into the meat. I will let you know how it tastes. Sam.

Tastes great! The dill was a good idea. This time I removed the lid just before it was ready, to let it dry out just enuf that there was no water sitting on it. Im still having problems with the photo tutorial link. It is in italian and it wont let me change the language. I have some nice shots of my fish for when I suss out how to get them on.

Thankyou Phil. I know the browse box you are talking about but I can't click it on my device. I am opperating on a Telecom XT network and Imageshack is not supportive of my device. I have spent hours trying and Imageshack only supports windows, mac and lynix. Are there any other media hosts I could use? I tryd to put a photo as my avitar but it keeps telling me it needs to be under 6KB wich my photo is, but still doesn't work. The only thing I can think of is that the XT satalite network I am using is reasonably new and these sites havn't registerd with it yet. Maybe another media host? ? ? Cheers. Sam

Well, spring is here In AOTEAROA, (New Zealand) The lambs are being born, yum. lambs tails cooked on the embers. cant wait. The daffidols are out, the birds are multiplying lucky things, and the fish are just starting to run. So it's time to get those vege' seedlings in and prepare for a season of fishing. The last two weeks I have been spending making a Kontiki to take my longline out. Its a little sail boat with a 200pound backbone line and 25 hooks. It looks like a dory yacht. It is to be used mostly off Tokarau and Ninety Mile beach for snapper, but I had an idea I would like to try. My theory is to launch it in the Taipa estury on an incomming tide, and tie the line to the front, then put the rudder in position so that it wants to cross the estury. Hopefully it will take the line out into the middle. Then pull it in just before high tide so it doesn't turn around and get tangled. Im just doing the finishing touches now. Putting flashing lights and a little remote controlled helecoptor on it and painting the handrails etc. Im naming it "HUNGRY HITLER STARVING STARLIN". Genaside to the fish. hahaha. Would love to share some photos with you all. I will keep trying and let you know how my Kontiki boat works in the next few days.
