Good to hear from you Sam you lucky bugger! Sounds like a kick-ass fishy barbie! I had to google kahawai and I found out it's a type of salmon.
....mmmm! hot smoked salmon and shellfish barbecue 8) 8)
I'm definitely coming out there one day. Maybe I'll win the lottery and take us all on a sausagemaking.org holiday?

Keep up the good work my friend

Hi Ryan, I don't know about fishing over in your country or what you use as bait, but alot of people over here including myself use it as bait to catch fish on as it is plentiful here. It's not pink but white and it should be bled when caught to keep in prime condition. The taste is beautiful when smoked or fried or how ever you want to cook it.

KAHAWAI: Scientific name - Arripis trutta, Maori name: Kopapa
Average size around the harbours is 40-50cm & 3-5 kgs, but do grow much bigger out in the ocean.

Thanks for the description of the Kahawai Dave.
For those with dribble drains over their keyboards, Im sure you all know what Oysters are, Kokata's are a flat Pippi (kidney shaped shellfish found in the sand), Paua (abalony) Very yummy done in cream, Kina (Sea eggs) fat rows yellow and creamy. My favourite! Cockels are a small clam found in the sandy estury, Kutai (mussels) BIG FAT ONES! Hope that fills ya keyboard bibs!

Hmm. Too bad I didn't have time for diving when I was in NZ a couple of years ago. :(
