Salami without Nitrates?

Whilst I am fully aware that it is possible to produce salami without nitrates/nitrites, (after all it was done for hundreds possibly a couple of thousand years before some bright chemist refined a process to produce the compounds NaNo2 and 3), do you think it is possible to produce salamis that are shelf stable which can be sold on a commercial basis?

Peter, personally I think not. Frankly why risk it?

As you know form posts elsewhere I am looking at a very old recipe at the moment which didn't add the usual nitrate as it got this from crushed lovage seed. but;

a) this is purely a personal interest project and not for sale. I am convinced that a lot of the 'old world - nitrate free' stuff was actually nothing of the sort.

b) i am not going to do it until i can fathom some idea of the nitrate content of the seeds so that i can be assured of sufficient ingoing to be safe.

I know of a guy that just had his deli shut down because he didn't use any cure or cultures. He dried everything the 'old world way'.
