New Aussie in the house.

Hi all,

My name's Rob, and I'm from the beautiful north coast of NSW (about 3 hours north of Sydney).

I found this forum because I want to start making more of my own smallgoods, and preserving the produce we grow on our small allotment on a friend's farm. This includes chickens, quails, and goats. I'm not sure how goat sausage will turn out, but comes the time, we'll find out.

I also suffer from MSG intolerance, so that's another good reason for making all my own products at home - I love Sausages, hotdogs, and most cured meats.

I think this is the perfect resource for me (and hopefully there'll be a few aussies on here to advise on sourcing casings etc.)

hi,I use goat meat to make Merguez north african sausage. from Len Poli recipes,
Good if you like spicy sausage

Welcome to the site. You'll find all the info you need here. I'm en expat Aussie living in Colorado for now. Hope to return to Oz some day. Originally from Walcha on the Northern Tablelands. I'll take a guess on your location...Buladelah, Taree?
Anyway, have fun making sausage and ti doesn't count of you don't post pictures.
