Accord powder, cheap phosphate?

Postby lesbanim » Sat Apr 05, 2014 10:06 am

My first post here so hello all :)
I've been lurking for ages but for the first time I have a question I couldn't answer with the search button!
I was asked recently about chicken sausages so I've been having a look for recipes and all the ones I've found call for Supaphos. I don't have any and I don't need to buy anything else so the cheapest I can get Supaphos including postage is £8 for 100g, prohibitively expensive.
Could Accord powder (such as here http://www.theasiancookshop.co.uk/accord-powder-phosphate-by-lobo-7477-p.asp) be used as a suitable alternative to Supaphos?

There are many poultry sausage recipes that do not require any kind of additive. Further, the use of phosphates in a sausage is at your option. Many do just fine if you simply omit the phosphate.

Forum member Tristar makes a lot of chicken sausage recipes and advises:

He also uses Accord here:

Whilst we would encourage members to use the Sausagemaking.org shop as they provide us with this free forum, the difference in price certainly stands in Accord's favour.

Thanks for your input chaps, I think I shall probably omit the phosphate first time round and maybe give it a try another time to see for myself if it makes a noticeable difference.
By the way, Wheels, you're a bit of a legend round my way! Thanks for sharing all your recipes with us on your blog, it's our go to site for most meat projects.
