I've only gone an got the urge to make some bacon - fed up with the gunge leaking out the shop bought stuff - UCK
I plan to follow Phils receipe here http://www.localfoodheroes.co.uk/?e=541 and some Cure #1 is currently winging its way to me - I hope!
Domestic management is not too thrilled with my plans so a bit of "expectation management " is in order
Re the drying part of the process. I have not got a cold building available this time of year so in the fridge it must go and I'll be in strife if I leave a chunk of meat on the fridge shelf to dry
So if I were to get a big plastic food box and drill a bunch of holes in it so the air can get to the meat (but other stuff in the fridge can't) would it be OK
