May I take this opportunity to say that I concur with what Quiet Water Farm (Jim) said a 110%

You are and have been our 'go too guy' since day one

I do love your ramblings ( sorry; strike that out :wink: insert words of wisdom :D ) upon your blog which I must say I do miss :(

I too saw this, but the bit about mould formation and lack of weight loss during fermentation caused me slight worries.

I thought it was really interesting, but a bit like recent discussions about vac packing meat with the salt before sausagemaking day (to promote myosin breakdown of the proteins to help achieve binding without mixing) I can see teh science just not the need. Never had a problem with fermentation hanging it or leaving i the tub before stuffing.
