Ruhlman and Polcyn recipe with 6 grams of mace added. Also added 40 grams of soy protein concentrate and made it course ground by request. Next time, if I remember, I will bump up the white pepper. I was asked why the ones from the store don't taste this good. :D

Thanks Phil, I smoked 19 lbs of pork butt on the 4th, we'll have some tonight and freeze whats left.

Dan, I'll get around to smoking a whole pork butt eventually, 1 year in and the garden's still in so much of a state that I can't even get to my smoker.
