easy easy things to cold smoke

Postby badjak » Sat Apr 12, 2014 8:12 am

As mentioned in another thread, I am having some problems running my proQ cold smoke generator throughout the night.
I have been giving some tips and hints on what I can do to solve this.
Now, I am one who never wants to waste anything, so I am looking for easy & cheapish stuff to smoke while testing how long the csg keeps working.

I was thinking of smoking some more eggs (as they always seem to come out nice)
What else can I try (bearing in mind that the amount of hours of smoke might be wildly variable?

Has anyone tried peanuts? Should I start with raw ones or roasted ones?
Maybe tomatoes or chili's? Any tips here?

Any other ideas?
Thanks

Eggs, nuts, dried chilli's,cheese (Edam good, red skin off), salmon after salt cure (also trout) (also herring/kippers) fresh sausages, trout, cured pork (speck), Bacon (checkout Wheels Localfoodheroes blog for THE best bacon cure), chicken, after a salt brine cure then roast and and and! Someone else add?

Thanks Ped,
I just want to use sort of expendable things as I might have to throw them if the smoker doesn't work OK, so all fish, meat, cheese etc items are out.

Any tips on how to smoke chili's and tomatoes?
I figure, I just slice the tomato and put on some mesh inside the smoker?
Chili's can probably go in whole.
Should I worry about botrytis while cold smoking fruits/veges?

Anyone tried peanuts before?

I've smoked peanuts, but wasn't too impressed although I know that others rave about them.

Ratman smokes Almonds, see:

Badjak, you have probably seen it now elsewhere on the forum, but i'm rather keen on good old cheese variants & trying to cold smoke typical food cupboard type stuff & see what, if any difference it makes.

I did try smoking eggs, both hard boiled & raw, but didn't get good results from either, waiting to hear back from an outbacker who has plenty of manuka wood around him to see if that makes the difference (the tarriness on the egg shell maybe)!?

had very good results with soy sauce & the likes, really helps me out on "rice & only rice diet days" a punch of smoke flavour keeps me chowing down & happy! (for instance)

..just take a look around the BBQ section

Hey Gus,
I have since tried smoked eggs ( and I like them), smoked almonds ( not too bad, but could be better), different types of bacon and smoked sausages.
I have run out of fine smoking saw dust for my proQ csg and working on ways to get my other sawdust working for enough time and/or turning suitable wood into smoking dust

Salt is the obvious one.

Lay it on a grease splatter guard.

Olive oil (extra virgin). Pour it into a shallow dish and bottle when done. Makes lovely salad dressing and a good gift if you can find a pretty bottle!
