I cant find picnic/Boston butt for my sausages so I have been using a leaner cut and adding back fat.
My question is could I use lard made from back fat instead of back fat?

No, it will just leach out or turn to liquid once cooked. Back fat is part of the meat content in sausage and would never cook away completely to rendered lard.

When you say 'could I use lard made from back fat instead of back fat?' Do you mean purchased lard in its pure form, or are you using pork fat to make your own lard ?
