The last new cookie I made this year was Thomas Keller's "TKO" also from his Bakery cookbook (this also can be found online).

It is pretty easy to guess what cookie he was looking to improve upon (and does). If you want a real dark color to the cookie, use coco powder marked "noir". You may need to add some milk to the dough to get something that can be rolled and cut. After the filling has cooled, whip it to a spreadable texture.

Paul, this sooo cruel. I am doing the first of two around the clock to keep up with things ........ all I got to in the last 20 hours is a sausage roll and a cup of tea. :( your stuff ls mouth watering to say the least

Nurembergers

2 1/2 c flour
1/2 t soda
1/4 t cloves
1 t cinnamon
1 t allspice
1/4 t cardamon
1/2 c chopped almonds
1/2 c chopped candied orange peel
1 c honey
3/4 brown sugar
1 egg
1 T lemon juice
1 t lemon rind

Bake at 350

This peel works very well for these cookies.

Sugar Plums

1 c butter
3 oz. cream cheese
1 c sugar
1 egg yolk
1 t vanilla extract
2 1/4 c flour
1/2 salt
1/4 t baking powder

1/2 c sugar
2 t cinnamon

Bake at 350F

I don't know why my mother called these sugar plums or why she pressed them out in this shape.

Cream Pralines

3 c sugar
1 t soda
pinch salt
1/2 c cream
3/4 c dark corn syrup
2 T butter
3 c pecans

Heat to 236 F and add nuts. Mix until the candy loses it's gloss then spoon quickly to Silpats.

I started this year with another cookie from Thomas Keller's "Bouchon Bakery Cookbook", vanilla macarons with French butter cream.

Springerle

4 eggs
1 # powdered sugar
juice of 1/3 lemon
1/4 c butter
3 1/3 c AP flour
1 1/2 t baking soda (or ammonia)
1 1/2 t anise oil

Mix and press into molds. Dry the cookies overnight on cookie sheets. Bake at 325F.

I bought molds for these from HOBI cookie molds and they are beautiful hand carved 12 days of Christmas. After drying, the cookies puff and form a crispy shell above a chewy base.

Zimtsterne

3 T butter
1 1/2 c sugar
2 eggs
1 egg yolk
1 t lemon juice
2 1/3 c flour
2 1/2 t baking powder
1 1/4 t cinnamon
1 1/4 t salt
1/4 t nutmeg
1/2 c ground walnuts

1 egg white thinned with water as egg wash
yellow sugar

Mix, roll and cut with a star cutter. Bake at 375 F.

You know this thread is torture for me! looking good again this year Paul.
I just spent a half hour looking for the cheese cracker recipe, then found it on page one of this thread. Not sure why the search didn't find it.

Benne wafers are small, thin, crisp sesame seed cookies that are eaten for good luck in the low country around Charleston South Carolina.
From Cooks Illustrated
½ c. AP flour
1/8 t baking powder
1/8 t salt
6 T butter
¾ c. light brown sugar
1 egg
¼ t vanilla
¼ c. sesame seeds, toasted
