Back fat supply?

I live in the northeast uk and getting hold of back fat is proving difficult!

None of my local butchers have it, nor the supermarkets. The best I can get is belly.

Anyone able to get it in the UK?

I get it from the butcher's at my local abattoir. You need a butcher that doesn't receive his meat prepacked.

Although, I'm surprised that they can't order it for you. Otherwise, maybe a local farm shop or small local producer? Or, maybe ask at the local farmers' market?

It's the domestic ungulates you need - check column E for Slaughterhouse and Column V for Porcine.

I asked my local Morrison's about buying their trimmed belly/back fat & the butcher said it was against Morrison's policy to sell it.
Kinda odd when they sell rolls of (fat & meat removed) pork belly.

I'd forget about supermarket suppliers; too many answers like the one you got (owing to the strict regulatory setting of a supermarket), plus the meat (or fat) ain't exactly fresh (it's a long time between killing and selling in the supermarket's supply chain).

Find and ask a butcher that is breaking down carcasses. But keep in mind that they might be using the back fat for their own sausages.

I get mine from a butcher who sells rare breed pork... one drawback is that the rare breed beasts he gets are quite small and the fat correspondingly thin.

Try contacting one of the UK online butchers, there are several who's web sites I've browsed. They might be able to deliver it. Mind you, the shipping costs will likely not be nice.

And, as Wheels has mentioned, farm shops often have butchers on the premises.
