Should this be fresh or powder?

Postby fredfish » Mon Aug 22, 2016 4:06 pm

Hi all

Not sure if the should be here or in recipes - sorry if I got it wrong!

I was looking at this recipe by Len Poli for Fresh Hot Sausage

http://lpoli.50webs.com/index_files/Fresh%20Hot.pdf

in the ingredients it mentions Onion powder and then it mentions Garlic (not stating powder) which inclines me to think that the garlic should be fresh.

However in the method section it says to grind everything except the pepper flakes and hot sauce into a powder - if I am using fresh garlic this would end up as a paste.

Hence my question do you think the garlic should be powdered or fresh?

Given time to experiment I could of course try both - but as usual for me I have left things a bit late!!

TIA

I'm almost certain it should be powdered. The recipe above that one specifies "fresh garlic" so I would take garlic to mean dried powder.
Fashionably late will be stylishly hungry.
