I bought a Sure-Fine Turkey breast from the local grocery store and realized it doesn't say anywhere on the package how much it weighs. There's a tag tied to the top of the net that says: 5125-04. So I'm going to go with 4 pounds. So I want to de-bone this bird, grind it up with some bacon (for fat) and make sausage out of it using my Dakota Stuffer. How much bacon do you think I should use? 1 or 2 pounds. (I've done a search using google and can't seem to get any help - also - the search engine on this forum as well as most others are totally useless)

Since the turkey is almost 100 % lean meat, I would try 2 pounds of bacon to provide some fat.
