3/4 HP Carnivore from Cabelas

Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

3/4 HP Carnivore from Cabelas

I sold a revolver and had plenty to spend on the king of grinders. The ease and quality of my finely ground pork is now incredible. No coarse grinding first, just cube the partially frozen pork and the grinder tosses out beautiful finely ground strings of meat.

Only bad thing is that it weighs 50lbs.

I've 6lbs of Pepper&Garlic Slim Jims in the smoker. First time that I'm using collagen casings, 17mm sized. Nearly done, smelling incredible, and the taste tests so far lets me know these are far superior to anything I can buy.

One thing about getting a proper grinder and easing the work load is that making sausages has become more fun, rather then a lot of work. Which means more sausages, lots more... :)

They are addicting. I've never thought much about heart disease or Cholesterol, but this much of a good thing has to be bad.

I have about 40lbs of Pork Shoulder in the freezer, and it's taking all my will power to not turn it all into sausages. :D
