Looking for chorizo verde recipe

Postby gsevelle » Wed Apr 12, 2017 9:58 pm

So saw chorizo verde on an episode of Man, Fire, Food and have started to look for recipes. Was only watching out of the corner of my eye so did not catch the recipe. I've done a search on chorizo verde and have found a variety of recipes. Did a search here and did not turn up anything.

Ok so with that being said does anyone here have a recipe that they are fond of that holds it green color when cooked? How do you cook your sausage?

Thanks for the help.

Is this what you are talking about? It's Papas y Chorizo Con Rajas from the "Meat me in Texas" episode (Season 5, Episode 10). The recipe below is from Goode Company BBQ and is on the official Cooking Channel site for the show's recipes.

Papas y Chorizo Con Rajas
(potatoes & chorizo with green chiles )

They also have that entire episode online at this link (Works in the USA, but I'm not sure if it will work in the UK).

No, not quite. It is actually a green sausage chorizo, I saw it first on the Show, "Man, Fire, Food) on the Cooking Channel. I have sourced a couple of Recipes but have not tried them yet.

Thanks for thinking of me though. :)

I have every episode DVR'ed, if you know which one it is on, I can see if I can find it.

I tried to search the episodes but came up empty.

Here is a recipe that I would probably start with that has the flavor profile I'd be looking for. http://www.seriouseats.com/recipes/2012 ... ecipe.html

As the author suggest this does not have the deep green color associated with this sausage. I'd probably add between 3 to 6 tablespoons of spinach powder to achieve the desired look. If you search recipes for this sausage you will see that most call for this to add the color or you can use fresh. I've even seen a recipe on how to make your own spinach powder but decided that drying out enough spinach would be too much of a hassle so I'll source it from one of the various internet vendors that I use.

I have not made this yet, when I do I'll post some pics and let you know how they taste.
This might give a whole new meaning to going green!
