Can previously frozen pork be cured?

Postby Snert » Mon Mar 26, 2018 10:03 am

I have read in Ruhlman's book that it is not possible to cure previously frozen pork is that a fact or a Ruhlman rule? I can only source certified pork from a farm 1280km from my house (ZAR).

That's strange considering that wild boar must be frozen to be made safe before curing. I'm pretty sure I've done it.
Fashionably late will be stylishly hungry.

Looks like everyone but Mr Ruhlman is marching out of step!

It's fine. Fresh is best, but frozen's fine.

Thanks a lot. The porkie can only reach me if frozen on the farm which is a ways from my home. Is it also possible to use this pork to make a ham?

There's no reason why not. There may be a loss of quality, as with any frozen product, but I doubt it will be noticeable as you're used to eating meat that's been frozen.

Enjoy, and let us know how you get on.

I have made sausages from previous frozen pork without a problem.
Also bacon works fine.
I was under the impression that pork used to be frozen to get rid of Trichinosis?
Also, almost all imported meat is transported frozen if the distances are too big

Yes the farm (www.happyhog.co.za) is 1280 km from where I stay, unfortunately.

For us, that wouldn't even be in the same country!
