New member here. I've been making sausages and charcuterie at home now for nearly 10 years. I've bought things from this site, but have only just stumbled upon the forums - what a resource!
Im always willing to learn and to help - thought i'd introduce myself.
By way of that, here's a lovely photo of some merguez i made recently. Shop bought versions tend to not have enough poke for me, so this recipe has been tweaked over a number of iterations. Recipe link below if anyone interested!
