Air dried cured meat and salami recipes

Looking at spuddy's recipe for chorizo - it calls for sherry. I don't have any at hand, nor do I have any port. What else could I substitute? Could I just use red wine?

Hi Aris
Port and sherry have a very high sugar content so if you were using wine I would do so with some addition of brown sugar.
