I don't know if you want to add this to the database, Franco. I made these Saturday, and they are absolutely deeeeelicious!
1kg pack mixed game
500g fatty breast of lamb
2 tbl fresh sage leaves
7-10 juniper berries
2 large shallots
1 1/2 cups rusk
2 tbl white peppercorns, ground
1 tbl salt
2 tbl bramble jelly (redcurrant jelly is fine)
I used the smallest casing I had - hog, I think.
Coarsely mince the first five ingredients. Add the next four, mix thouroughly. Fill your casings! I left them for 24 hours before eating, and they were very good, with little juniper explosions of taste every now and then. Actually after 20 mins in the oven the dish was very dry, so I pricked them. The the fat came out and left the sausage nice and moist.
