If anyone fancies another good book:

I have this and use it, and at this price it is a bargain. Have a look at the reviews on Amazon if you don't believe me: Tom Keller makes Heston Blementhal look more of an amateur than he actually is.

I thought that Heston Blumenthal was an amateur :-) I mean, no formal catering qualifications or training or anything..

(I don't want anyone to think I dislike Mr Blumenthal, even if he does play with his food. I should have said that that Tom Keller is at least as good as Ferran Adria but with a more culinary and less scientific approach.)

Not really a fair comparison though. I mean a totally different style of cooking.

Given a choice between El Bulli and The French Laundry, all expenses paid, how much sleep would you loose trying to decide? I just wished to convey the depth of my respect for Bouchon, and the crack about Mr Blumenthal was simply to reflect that. I have eaten at the Fat Duck, and the hat I wear in weather like today's is firmly raised.

Heston Blumenthal has a TV series coming in September/ October one of the programmes is supposed to be about sausage. According to the Independant a week or two ago the recipe includes fat you set fire to (for the smoked flavour) and some special liquid instead of water

I'm looking forward to it just to see what its like
