Hi All,
Just found your site which makes for some very interesting reading and lots of helpful tips.
I am fairly new to this game but am willing to have a go at most recipes.
I have made some bacon, smoked salmon (Loux style)
, bacon hocks which have all turned out very well. I am now looking at making some Parma ham and Proscuitto and would appreciate if somebody good ster me in the right directions for the recipes.

You can use the search option on this site, or you can go to Len Poli's site (see link below) which has 2 recipes, including his new, no-nitrite/nitrate recipe. Good luck, have fun.

I have had a look at the site you recommended and it looks like all of those recipes will keep me busy for a while.
I will let you know how they turn out.
