Hi, Here is my sausage mix. It�s my first try and comments welcome. I noticed that the ingredients separated when put in a jar so to get round this I ground ALL the ingredients with a Mortar & Pestle and worked to a uniform powder (is this a common thing to do). I use 15 g of the mix to 500 g of sausage meat.
140 g Salt
13 g White Pepper
14 g Black Pepper
14 g Sage
5 g Nutmeg
5 g Mace
5 g Marjoram
2 g Cayenne
2 g Coleman�s Mustard Powder
