I just tried the Oddley's favourite recipe sauasage:

Awesome, and I used hog casings for the first time too. My wife had one word for them "Exceptional" Damn, do I mention the Hobby Stuffer now or nearer Christmas?

I've made the above into a premix as mentioned, got enough for 10 kilos, wanted to try then last week but something always comes up at the last minute. :cry:
As for the hobby stuffer, I say go for it now. I managed to convince my wife to let me part with 1 1/2 months of my salary for a stuffer after producing enough good sausages and selling some as well. :wink:

What did you get Lance?


I bought a SIRMAN 8 litre heavy duty stuffer. Can't get any smaller ones here. But now I'm glad I didn't get a smaller one, I now make batches of 4-5kg each. So with this stuffer, I need to load it only once. I wanted to get the 3kg reber stuffer from Franco actually, but was worried about it not clearing customs easily.
