Hi, Shane, pray, tell: what's a gammon ham? I know it's pork, but that's as far as it goes.
From what little research I've done on pork, I know of at least four styles of 'breaking the carcass down': English, French, American, and us Canucks.
It would be fun to see the cutting charts for all 4 styles.

Canuck = slang for Canadian, maybe offensive when used by non-Canadians

Nope, usually not an offensive term at any time..... unless used with obvious malice, for shock effect, by boors, etc....Our hockey team bears the moniker proudly.

Ken: In the UK, when we refer to gammon we usually mean the hind leg of a bacon pig and it's more expensive than other parts of the animal. It would normally be cut into three parts - corner (top), middle (leanest and therefore most expensive) and hock or knuckle.

It's just like salty ham or a roasted joint of bacon
Save the enviroment, we cant afford to loose more animals, what will we use for variety in sausges, i for one would have liked a dodo banger!

"oh"...........Gadzooks....one would think I'm trying to find a replacement barrel for Gerry Bull's supergun !!! It's bacon. Oh well.... I have a note in to the Costcutter chain, to see what they stock, if anything.
Thanks for the heads-up, on the demise of the thing.

I interupted a senior manager and another when they were in deep discussion in the crisp nuts and popcorn section to enquire whether they had any popping corn rather than the bagged up premade stuff. They both stopped what they were doing and both took me to the relevant aisle to show me where it was... I was somewhat shocked, in a nice way :D
