Hi all: Love the forum great information. Anyways looking to make some Cacciatorini salami's ? Any body have a recipe for these or could recomend a recipe like this. Thanks in advance. :?

I'll check out his site. In canada they sell it as a little salami and the translation is hunters sausage so im told. I have found two spelling of it. the way you spelt it and i googled it and got the spelling the other way. Anyways i'm going to make 3kg in collagen 65mm casing this weekend.

Cacciatore means hunter in Italian. The "ini" bit on the end of the word implies small in Italian.
You'll notice that Len's version has the "ini" tagged to the end of the word "salami" instead of the word "cacciatore". This is the correct way of describing it as it is the salami that is small and not the hunter.
