Smoker water tray

Smoker water tray

If I am trying to hot smoke using my home made smoker I have trouble getting upto the nessary temperature.
Would it be o/k to remove the water tray when hot smoking?
I am using wood chips and the heat source is a camping gas ring.
Its good for cold smoking at a temperature aprox 80-100f.

Yes, by all means take it out. The water tray is there to help keep temperatures down and/or even if there is a rather hot fire underneath. It also fills the BBQ with steam to cook the food by steaming, which you might not want for classic hot smoking. I rarely, if ever, use mine in my Brinkmann.
