Blue Cheese Cracking

HI,

I followed Riks great blue cheese recipe and now it is 3 weeks old, smells good, looks good, BUT has developed some strange cracks in the skin. The alomost look like little wounds.

Is this normal?

Too dry, sounds like theirs no humidity were your storing it, needs about 85%

In a cool dark cupboard, is it too late is it runied?

You may be OK, although the outside may be too dry the inside is probably still fine. Get a large plastic sealable box and place it in there with the lid open a tiny crack. That should boost the humidity and hopefully it won't get any worse.
