Me again

I had a go at making Pork pies over the festive break. I could not find any Anchovy Essence any where in my home City but I found some Anchovey Sauce. See photo...that is if I have done it right! [/img]

Has any body used this before, does it do the same job?

Is it the anchovy or is it the bacon that keeps the pork pink?

My next question is, If you buy a pork pie from ......say Sainsbuggeris, they are of a browner colour, how is this acheived? Do they brush it with some thing like gravy colouring.

Anchovy essence is impossible to obtain unless you buy a crate from an ex-patriots websites. There is a discussion here: http://forum.sausagemaking.org/viewtopi ... c&start=45

Page 4 onwards should have most of it.

Just made a batch of pies last week using Oddley's pastery and Pauls filling recipie. I have never seen anchovey essence over here so just blended some anchovy paste with a bit of bacon drippings (just to make it extra healthy). I also added a bit of good oyster sauce (non of that fake stuff) with good results. The pies came out extra savory with a nice pink blush. My parrot chewed the buttons off my camera or I would post some pictures...

Postage is given as �8.00 but if you are only ordering essence the cost
comes down to something like �1.50
They keep some very attractive food items also.

Nice find! how do you get the �1.50 delivery charge? Choosing local delivery seemed the only option and I'm not sure I count as local :)

Dave,
I had ordered other things but they were out of stock, so the order consisted of only anchovy essence, which hadn't turned up. Contacted them this afternoon and was put in touch with the head man. Very nice chap (Alec), he apologised for the delay and said there was no way he could justify charging �8.00 and would charge me about �1.50.
He was very curious about the use of anchovie essence so I explained
about the search for it and the forum, he seemed very interested.
There is a telephone number on the site but normally he's at the farm shop. Telephone 01887 822821 and ask for Alec.
I think if you introduce yourself as moderator for the forum he may well set something up.

It was a Tesco Extra in Hertforshire - though to be honest, it is not always on the shelf. It may well be a seasonal thing. Speak to your local supermarket manager or e-mail Tesco to find out.
