Just wondering does anyone know which breed of pig is preferred by commercial producers or are they hybrids, also do many of you use your own pigs. Those of you who have tried different breeds whats the best for what

Large whites crossed with Landrace tend to be a favourite hybrid for commercial use.

Rare breeds are my personal favourites, Duroc is an excellent all rounder, Gloucester Old Spot is great for family joints and sausage but is not very good for spit roasting as you loose too much fat in the cooking. The Tamworth is another great pig probally best used for hams and bacon.

Oxford and Sandy Blacks are similar to GOS great for family joints and sausages.

This of coarse is only personal opinion, I've tried most pigs including wild boar even Badger and I cannot think of any that I dislike.

You could start by asking your local abbotoir, another approach would be via the rare breeds society.Searching the internet in your area might throw a couple of contacts.Even the NFU office of your area will be able to put you in touch with a friendly farmer.

I'm in South Hertfordshire. Not many abbotoirs around here as far as i know - I live in the city :-)

I breed and sell Free Range Large Blacks I will have some ready about November but i have to know soon because I wean some in a few wks and what is not for consumption will be sold as weaners. I live In Bury lancs. Just send me a PM

FatMan; They compare very well to other trad/endangered species. I belive the main reason the G.O.S is so popular is because Hugh kept them on river cottage. Oh by the way once a large black is proscessed its skin is pink its just all the hair thats black this makes them less prone to sunburn. An important fact to someone like me who tries to leave them out in the field as long as poss. The pork tastes fantastic but the kill weight is smaller as they lay down fat more easily than a modern hybrid. I suppose that is why they are endagered. After all a struggling house wife wants as much lean meat as poss for her money and taste/ quality is not concidered. Personally I like a bit of fat on my chops after all you can always leave it on the plate.
Franco: Of course you can but be sharp. any weaners not ordered for pork will be sold of at 8 wks which is 3 weeks from now.

Just out of interest , what weight do you kill at? do you know what the average fat count is? (probe) 12mm or greater I expect!

I finish the Large Blacks at about 60KG live weight for pork I have as yet to try curing bacon but that weight seems about right to me. I have no idea about probes etc but about 1/2 inch on the chops and a lot less on the joints.

Sounds good, I used to have mine 65kg dead weight , but I must point out that was for pig roasting, for bacon nearer to 90kg dead weight.

I raise Gloucestershire Old Spot pigs in South Somerset. If anyone is interested I can supply fresh pork year round. Half a pig weighing about 25-30 kg before butchering, cut to your specification, freezer bagged and labelled will cost �2.20 per kilo collected. If you want the joints vacuum packed it will be extra. The GOS gives more fat than modern hybrids but is generally considered much tastier. :D I find that using a whole pig, both shoulders and one belly makes sausages that are the right consistency and much admired.
