plywood sheets come 4x4x8 so only one will be required and ther is no seam to worry about. I am concerned with air flow and Dave's mouse issue, Last thing we need is 5 poonds of fish sampled on. I am thinking of using expanded metal on the sides with sliding doors to control air / heat flow.
I like the propane burner, but would like the option of using hardwood charcoal.
If I go with one of those smoke generators, I can deal with heat in numerious ways, even electrically.
Circulation fans may also be in order to even out heat and smoke flow
