There is a problem in that if John accepts a delivery of a Dr Dave product he has no guarantee it is fit for human consumption, whereas I would hope a commercial product is FDA approved.

I may be able to let the water evapourate and turn it into smoke powder. Not something I've tried, but it might make shipping easier.

I think you'll find the powder is spray dried Dave, you might try condensing even further.
Put it in a small bottle and label it Spanish Fly.

Now I see what the diffferance is. I'm a hot smoker and you guys are cold. Hot smokers wouldn't dream of using liquid smoke as there is no need in the process.

Yeah...Dave has been trying to kill me for months now.....

I started using liquid smoke before I got my water smoker, you can cook ribs in an oven and get the same texture but no smokey taste, so I used a little L/smoke in the apple juice when basting/spraying.
You don't get the smoke ring/penetration as a smoker but it still tastes pretty good.

It's a New Braunfels Water Smoker, mostly used for cold smoking these days. Do you have one Dr. S ?

No but I wanted one years ago. I understand they need some mods to get them to smoke with a bit more controll.

It's built out of battleship armour plating and it will undoubtledly outlast me and my children. But as a cooking device you'd be better off kidnapping a dalek and turning that upside down

Mine acts as a perfect cold smoking shed, or a hot smoker heated by a gas ceramic heater. Or as an oven cowl over a wood fire. Would I ever try and put charcoal in it again? Well, never say never, but it's unlikely ...
