Corn Relish

A good one to eat with your sausages.

Corn Relish

2 lb corn*
4 oz red pepper, chopped small
4 oz green pepper, chopped small
4 oz onion, chopped small
1/2 tbsp salt
2 tbsp mustard powder
1 pint white vinegar
1/2 tbsp turmeric
8 oz sugar
� pint water
1 tbsp corn flour

Cook corn in boiling water 5 minutes. Combine corn with remaining ingredients and simmer 10 to 15 minutes. Bring to boil, pack in hot, sterilized jars.
Seal and store.

Makes 4 x � pints.

*Frozen corn is fine for this recipe.

This one is not the American idea of hot dog relish, its what my grandmonsters like.

Hot Dog Relish

1 lb onions, chopped small
1 lb cabbage, chopped small
1 lb green peppers, chopped small
8 oz red pepper, chopped small
8 oz cucumbers, chopped small
1 1/4 pints vinegar
2 oz salt
1 lb 8 oz sugar
1/2 tbsp celery seed
2 tbsp mustard seed
1 tsp Turmeric

Chop vegetables and place in a bowl with the salt, let stand overnight. Rinse and drain well. Combine the rest of the ingredients in a non reactive saucepan large enough to accommodate the mixture and heat to boiling. Simmer 3 or 4 minutes and seal in 1/2 pint jars.

Hamburger/Hot dog Relish

real tasty on hot dogs or burgers




Green Hamburger/Hot dog Relish

12 large cucumbers
6 medium onions
3 cups white sugar
2 cups vinegar
Fine salt
� Tsp. turmeric
1 Tsp. celery Salt
2 Tsp. Mustard seed
� Tsp. Black Pepper
2 TBS flour, or more if needed.
Green food colouring


Remove seeds from cucumbers but do not peel.
Coarse grind onions and cucumber. Sprinkle with fine salt.
Let stand 3 hrs then drain. Place other ingredients (except flour and food colouring) in pot and bring to boil, add cucumber and onion to boiling mixture. Bring to a boil add flour to thicken and cook approx. 5 minutes; add green colouring to desire colour. Yeild = 20- 250 ml jars

Onion Relish

1 lb onions
2 tbsp unsalted butter
2 tbsp sugar
2 tbsp red wine vinegar
1/2 tsp salt
1/4 tsp pepper

Cut onions into thin wedges. Heat butter in a large frying pan over medium heat. Add onion, saute until browned, 10 to 15 minutes. Sprinkle with sugar. Stir in vinegar, salt, and pepper. Serve with steaks.
