Fred-up's burger and BBQ stall

Oh yes I have a few for here as well.

This is a poor mans steak Diane. (not my ex, she's under the patio)

Hamburger Diane

1 lb beef mince
1/4 tsp Salt
1/8 tsp Pepper
2 tbsp Butter
1 tbsp salad/corn oil
1 tbsp prepared mustard
1 tbsp lemon juice
1/2 tbsp Worcestershire sauce

Mix the mince, salt and pepper together lightly and form into 1� patties. Melt butter in frying pan. Remove from heat. Blend oil and mustard into butter, return to heat. Saut� hamburgers on medium heat about 5 minutes each side. Remove and keep warm. Add lemon juice and Worcestershire sauce to pan and stir over low heat until well blended. Return patties to pan and let simmer in juices a few minutes while spooning juice over the top occasionally.

A basic burger, you can add oion if you wish. I would sugest 1 small onion chopped small.

Basic Burgers

1 lb minced Beef
4 fl oz Water
1 tsp Lemon Peel, Grated
1/2 tsp Salt
1/2 tsp Ginger, Ground
1 tsp Instant Beef gravy (Bisto)
1 tsp Lemon Juice
1/2 tsp Sage
1/4 tsp Pepper

Mix all ingredients together. Shape mixture into 4 patties, each about �� thick.
Grill the patties 4� from the heat, turning once, for about 10 to 15 minutes.

Pork Apple Burgers

2 lbs pork mince
1 cooking apple, peeled, cored and chopped
1 onion, finely chopped
3 cloves garlic, minced
2 oz teriyaki sauce
1 egg
8 hamburger buns
1 tin sliced pineapple, drained

Preheat grill for medium heat.
Mix together pork, apple, onion, garlic, teriyaki sauce, and egg in a large bowl. If too dry, add some juice from the tin of pineapple slices. Form into eight patties. Lightly oil grill grate. Grill pork burgers for 10 minutes, or until well done.

Toast buns on grill. Serve burgers on toasted buns topped with pineapple slices.

Turkey Burgers

1 lb minced turkey
1 tbsp garlic powder
1 tbsp red pepper flakes
1 tsp dried onion (optional)
1 egg
4 oz crushed cheese flavored biscuits

Preheat a grill for high.
Mix together the minced turkey, garlic powder, red pepper flakes, minced onion, egg and biscuits using your hands. Form into four patties.
Place patties on the grill, and cook for about 5 minutes per side, until well done.

Something to do with your home cured ham.

Ham Kebabs

20 large cubes ham, 1" cubes
8 cherry tomatoes
Your choice of vegetables: sliced courgette, green pepper, mushrooms, red onions.
1 clove garlic, chopped
4 floz oil
Juice of 1 lemon
1 tsp dried oregano or basil
Salt and fresh ground pepper, to taste


Make 4 kebabs with vegetables and ham.
Mix remaining ingredients to make sauce that may be used to marinate kebabs, brush on kebabs during cooking or drizzle on cooked kebabs prior to serving.

Grill kebabs on a very hot barbecue until lightly browned. Cooking time is short. Take care that kebabs do not burn.

Serve immediately with salad and potatoes or rice.

Kefta Kabab

1 lb lean beef or lamb, minced
2 oz fresh parsley, chopped
2 oz coriander, chopped
1 medium onion, grated
1 tsp ground cumin
1 tsp paprika
1 tsp freshly ground pepper
Salt to taste

Combine all ingredients in a large bowl. Mix well. Let stand 1 hour to blend flavours.

Preheat grill. Or prepare hot coals on barbecue grill.

Using about 2 oz mixture for each kebab, mould into a sausage shape around flat metal skewers. Moistening your hands will help mould the meat mixture onto skewers. Taper ends of sausage shapes to prevent meat from slipping off skewers during cooking.

Place skewers on grill rack 4� from heat source on grill or over hot coals. Turn frequently to brown evenly until meat is done as desired, 10 to 15 minutes.

Chilli Franks and Rice

8 oz onion, chopped
12 oz package (or homemade) frankfurters, cut into 1� pieces
1 pint chilli sauce
15 oz tin kidney or pinto beans
2 tsp chilli powder
1/2 tsp salt
1 tsp prepared mustard
5 to 6 drops hot pepper sauce
3 oz sour cream
1 � lb hot cooked rice

Combine onion and frankfurters in a large fryingpan. Cook over medium heat, stirring, for 3 to 4 minutes.
Add chilli, beans, chilli powder, salt, mustard and pepper sauce. Cook, covered, 5 minutes longer or until bubbly hot. Stir in sour cream.
Serve over beds of rice.

Chili Dog

1/2 lb beef mince
1 small onion, chopped
1 small green pepper, chopped
1 medium clove garlic, crushed
1 tbsp chilli seasoning
16 oz tin chopped tomatoes
1 tbsp tomato paste
1/8 tsp ground red pepper
8 frankfurters
8 frankfurter rolls
2 oz extra mature cheddar, shredded


Saute beef in large frying pan over medium heat for 3 minutes, or
until browned. Add onion, green pepper, garlic and chili seasoning;
cook, stirring, 3 minutes longer. Stir in tomatoes and their juice,
tomato paste, ground red pepper and 1 tsp salt; bring to boiling.
Reduce heat, simmer, uncovered, 10 minutes.
Prepare barbecue grill. Score frankfurter crosswise
about one third through. Grill, 6� from heat and turning
occasionally, 5 minutes. Place rolls or grill to toast lightly.

Place frankfurters in rolls. Spoon some chilli onto each frankfurter,
sprinkle each with cheese. If desired, serve with fries.

Pork and Sage Kababs

1 lb pork mince
4 oz fresh bread crumbs
1 small onion finely chopped
1 tbsp chopped fresh sage
2 tbsp applesauce
� tsp ground nutmeg
Salt and pepper
3 tbsp olive oil
1 tbsp lemon juice
6 tbsp plain yogurt


Place the ground pork in a mixing bowl with the breadcrumbs, onion, sage, applesauce and nutmeg. Season to taste. Mix until the ingredients are combined.

Using your hands, shape the mixture into balls about the size of large marbles. Place on a plate, then cover with plastic wrap and let chill for at least 30 minutes.

Meanwhile, soak 12 small wooden skewers in cold water for at least 30 minutes. Thread the pork meatballs onto the skewers. Cover with plastic wrap and set aside in the refrigerator.

Preheat the grill.
To make the baste, combine the olive oil and lemon juice in a bowl, whisking with a fork until the mixture is well blended.

Grill the kababs over hot coals, or in grill, for 8 to 10 minutes, turning and basting frequently with the lemon and oil mixture, until the meat is golden brown and cooked through.

Serve the kababs using the plain yogurt for dipping.

A very basic burger recipe, add to it as you want.

Homemade Burgers

12 oz beef, pork, lamb mince
1 tsp dried herbs
Salt and Freshly ground black pepper to taste
1 tbsp vegetable oil
4 burger buns

Mix the mince with the herbs and season. Divide into four, and shape into burgers.
Heat the oil in a large frying pan and fry the burgers for about 5 minutes each side, until cooked through. Alternatively grill for about 10 minutes a side.

Serve in buns, with cheese and salad.

Beef and Bacon Burgers

12 oz lean minced beef
4 oz finely chopped onion
2 slices bacon, diced*
1 tbsp worcestershire sauce
2 oz fresh soft bread crumbs
1 egg
1/4 tsp salt
1/4 tsp pepper
2 tbsp flour
2 tbsp oil
4 hamburger buns, split and toasted

Combine minced beef, onion, bacon, worcestershire sauce, bread crumbs, egg, salt, and pepper. Mix with hands until blended. Shape into 4 to 6 burgers and coat lightly with the flour. Heat oil in a large frying pan over medium heat.
Fry or grill the burgers for 7 to 10 minutes on each side.
Serve in toasted buns.

* Smoked bacon gives a nice flavour to the burgers.

BBQ Cheeseburgers

1 lb lean beef mince
1 onion, finely chopped
Barbecue sauce
4 slices cheese
4 crusty rolls/burger buns
lettuce
Tomato, sliced

Combine ground beef, onion and 2 tbsp barbecue
sauce, mixing thoroughly. Shape into four �� thick patties.
Place patties on grid over medium ash covered coals. Grill 14 to 16
minutes or until centers are no longer pink, turning once. Approximately 1
minute before end of cooking time, brush top side of burgers with
additional barbecue sauce; top each with 1 slice cheese. Cook until cheese
slices are melted.
Line bottom half of each roll with lettuce and tomato, top with
cheeseburger. Cover with top of roll and enjoy.


Barbeque Sauce

1 red pepper
1 green pepper
1 yellow/orange pepper
1 tbsp olive oil
1 tbsp of worcestershire sauce
pepper and salt to taste

Finely chop the peppers and mix with the olive oil and worcestershire sauce. Add a little salt and pepper and lightly fry the mixture until brown.

These are made in the oven but are great with BBQ's.

Crispy Potato Wedges

6 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 tsp each, basil, thyme, oregano
1/4 tsp paprika
4 to 6 potatoes, cut in wedges (quarters)
4 oz Parmesan cheese

Mix oil and seasonings together. Roll potato wedges in mixture. Lay flat on ungreased baking sheet. Bake at 220C for 15 minutes. Sprinkle Parmesan cheese on potatoes. Bake 15 more minutes. Serve hot.
