Anybody knows how to use soy flour or soy concentrate to thicken sauces and gravies?

Hi Dave,
I have tried soy flour, you need to mix it with water same as corn starch. Be sure to give it time to thicken before you add more till you get to the texture you want.I prefer potato starch has a lovely texture, they use it in pies as well.I think you can get some from this site.

David,
I used soy flour as an ingredient during my spell on the Atkins diet a few years ago and it does add an after taste even in smaller quantities.
