Mango Pork Recipe Wanted

I have just been given a large bag of dried mangos, and I have quite a bit of newly harvested wild boar in the freezer. Does any one have a pork and mango recipe I can adapt?

Thanks, Phil. I found a recipe for pork and mango skewers which had quite a few spices that look like they will work well. My main concern was what spices might work well, so I think I've found it. I will experiment in a few weeks and post the results.

BTW, the mango I was given was dried, so the liquid issue is moot.

Wil you se the mango in its dried state or, will you rehydrate it first?

I will rehydrate it, as it is easier to chop prior to mixing with the minced boar. Too, the mango has sugar added, so rehydrating can mitigate some of that.

Just an update on the mango sausage. I, in the end knocked these on the head because the fibres in the mango came through into the sausage and although for home consumption they were fine because I knew what the mango texture was, it was not fine commercially.

Thanks for the input. Do you think dried mangos, finely chopped and then rehydrated, will have the same fibrous effect?

I really dont know sorry, however Mango is quite fibrous.

Try putting some in a test burger before you go the whole hog :lol: and see how they come out. As I said I stopped because I had more than one customer bring me back what they thought was a hair (dog, cat mine) but of course it wasn't, it was mango - well I hope it was!
