salami with fuzzy mould?

Postby richardq » Sun Nov 30, 2008 12:03 pm

Hi. My salamis have been hanging for about 6 weeks now, and 3 weeks ago they developed a fuzzy/furry white mould, in addition to the healthy looking white surface mould - are they destined for the bin, or should i just wipe it off and see what happens? at this rate it looks like my "salami-for-xmas-presents" idea is going to be a non-starter!!

Fuzzy cotton wool is not good as that is a fungus, not a white penicillin bacterial bloom which is good. Wipe them down with vinegar and all may be fine though.

Curing is not an exact science... So it's not a sin to bin.
