I've got some minced lamb (butcher was out of pork today) - give me some suggestions on what to make with it tomorrow. I've got fresh hog casings, and collagen sheep casings. I'm keen on the sheep casings, but at the same time I want to use up my fresh hog casings (had them for a while).
I've done merguez - so i'd like to try something else if possible. My last resort would be to make Boerewors with a mixture of lamb and beef - but i'm open to any suggestions!
