Air dried cured meat and salami recipes

I am hot smoking. I think the skin has been taken off. I will post a picture before I smike them. Do they need to dry before going into the smoker? Thanks again for all the help. You guys cam take years off of the learning curve.

I assume you need to dry the bacon, but hot smoking bacon is more of a US thing, so I'll defer to one of your fellow countrymen.

Once they have been cured with Tenderquick can I either hot or cold smoke?
