My daughter lives in Toronto and I visit every year and one thing I really like is the streaky bacon in the grocery stores.
It is off the belly and very fat but I love the flavour and cook till crispy.
After frying this bacon you are left with a pan of fat, I know its bad for the health but what the hell I am getting on and I like the taste.
I ate worse in my 25years in the merchant navy and am still going strong.
Anyhow I would like to know off our Canadian members what the cure is for this type of bacon.
I do not think its smoked, or if it is its very lightly.

I am going to try your recipe just one question
Does the maple syrup not just all drain off with the heat of the smoker?

Yep, there is some drippage but well worth it

Mortons is a tricky thing to get here in Canada there are a few places but we tend to get it at B&P or Sausagemakers over in Buffalo
